I recently posted my lemon drizzle on Instagram and tonnes of you messaged me for the recipe so here is my Moist Lemon Drizzle recipe: its super easy. I absolutely love lemon drizzle and it took a worldwide pandemic for me to find a recipe and tweak it so it was super moist and yummy. I have now made 4 of them and one will be a little Fathers Day present for my dad. Cake is such lovely personal gift that maybe it will inspire some of you to make some for your dads this weekend.

Lemon Drizzle is one of the easiest cakes to make as you literally stir in the ingredients then pop it in the oven so it’s perfect to make wether you are a beginner baker or a seasoned pro. I am definitely more beginner. Recipe is as follows:

ingredients

• 175g self-raising flour
• 175g caster sugar
• 175g softened butter
• 3 eggs
• 1 zest of a lemon
• 3/4 tsp of baking powder

for the drizzle

• 100g granulated sugar
• juice of one lemon

method

1. Preheat the oven to 180 degrees. Zest the lemon with the small side of grater, you want to get all the yellow off the lemon. Mix together the flour, sugar, butter, eggs, lemon zest and baking powder until it is all combined. Literally every ingredient.
2. Turn into cake tin/loaf tin and bake for 40 minutes. Its a long baker but it does take a while for the cake to bake in the centre. Control the urge to check on it as opening the oven will cause the cake to dip.
3. While the cake is still warm mix together the granulated sugar and lemon juice and pour over the cake.

Super Easy right? One of my favourite recipes to whip up and leave to bake while I busy cleaning the kitchen. Tastes amazing and makes the entire house smell like lemons. Perfection.
